Breakfast Veggie Sandwiches

I made these this morning 
and they were great.

Ingredients:
English Muffins (I made gluten-free english muffins)
1 T olive oil
1 avocado
1 orange bell pepper, cut into thin strips
a few mushrooms sliced
1 cup fresh spinach
salt pepper
canadian bacon

Directions:
Cook bacon in a skillet until heated thoroughly and it begins to get brown.
Remove from skillet and set aside.
Add 1 T olive oil to skillet and heat.
Add peppers and mushrooms and stir until cooked about halfway through.
Add spinach. Sprinkle with salt and pepper and cook for 1 minute or until spinach wilts.
Remove and place on top of a buttered english muffin.
Top with a slice of avocado and you have a wonderful healthy breakfast sandwich.
