After going gluten, sugar and dairy free in 2010 - I am healthier and feel so much better! I have always enjoyed cooking and meal time has always been our family's time of the day to enjoy each others company. Baked Peach Oatmeal
Ingredients:
1/2 cup applesauce
2 eggs or 2T chia seed + 6 T warm water
1/4 c pure maple syrup
(if you want it sweeter, add 1/2 t - 1t of Stevia with maple syrup)
1 1/2 cups dry quick oats
2 tsp baking powder
1 tsp salt
1 tsp vanilla
1 cup diced peaches, (if using canned, reserve juice)
1 cup milk (I used almond milk)
1/2 t cinnamon
3/4 c juice (reserved peach juice or white grape juice)
Directions:
In large mixing bowl, combine applesauce, eggs, and Maple Syrup. Add baking powder, salt, cinnamon and vanilla and stir. Then stir in oats.
Drain peaches, reserving juice. Add water to peach juice to make 3/4 cup or use 3/4 c white grape juice. Add chopped peaches, juice, and milk to oatmeal mixture.
Pour into a greased 8"x8" pan. Bake at 350 for 35 minutes, or brown on top.
Makes 5-6 servings. For a bigger crowd, double ingredients and place in a 13"x9" pan.
