Spaghetti with Meat Sauce (Jim's favorite)

Ingredients:
1 lb ground beef
1 medium onion
1 green bell pepper
2 cloves garlic minced
1-2 T olive oil

1 - 28 oz can tomato purée
1 - 14 oz can tomato sauce
3 oz or 3 T tomato paste
1/4 t salt
1/4 t basil
1/4 t oregano
1 T Emeril's Bam (ingredients below)
1 cup water

Directions:
Heat oil in large saucepan. Add chopped onion and bell pepper and cook 3 minutes. Add garlic and cook 2 more minutes. Then add ground beef and cook until brown.
(Drain any grease if necessary.)
Add remaining ingredients and stir well. Bring to a boil, then reduce heat and simmer at least 30 minutes.

Serve over spaghetti noodles or spaghetti squash.

*To cook spaghetti squash - Cut squash in half. Scoop out seeds and throw them away. Rub olive oil over inside halves of squash. Sprinkle with salt and pepper. Turn upside down (skin up) on a cookie sheet. Bake at 450 for 30-40 minutes. Scrape out spaghetti with a fork.

Emeril's Essence (Bam) Recipe:
2 1/2 T paprika
2 T salt
2 T garlic powder
1 T black pepper
1 T onion powder
1 T cayenne pepper
1 T dried oregano
1 T dried thyme
Combine all ingredients and mix well. Store in an airtight container.
