Good for You Banana Bread

Ingredients:
2 c whole wheat flour
1 t baking soda
1/4 t salt
1 egg
1/2 c sugar
1/2 c applesauce
2 T buttermilk
1/2 t vanilla extract
3 ripe medium-large bananas
1/2 c + 1/3 c chopped walnuts

Directions:
Preheat oven to 325 degrees F. Grease a 9x5x3 loaf pan and dust with flour. Blend together the flour, baking soda and salt and set aside. Mix together the egg, sugar and applesauce until combined. Add the flour mixture and when blended add the buttermilk, vanilla and mashed bananas and mix until combine. Fold in 1/2 c chopped walnuts. Bake for 45-60 minutes, until a toothpick inserted in the center comes out clean. Cool for 10 minutes on a wire rack before removing from pan. 

Makes 12 servings. Per serving - 11 g sugar, 150 calories, 2.1 g fat, 27 carbs, 3 g fiber, 3g protein, 2.6 mg NA
