Ingredients:
2 T olive oil
2 lbs ground beef
1 medium onion, diced
2 cloves garlic, minced
2 cans diced green chiles (if you are cooking black beans, reserve 1/2 can for the beans)
1/3 c water
2 T tomato paste
1 T chili powder
1 T cumin
1/2 t salt
Directions:
In a large skillet, saute diced onion for 5 minutes and then add minced garlic and sauté for 2 more minutes.
Add ground beef and brown. Drain off any excess grease.
Add water, tomato paste, chiles and seasoning and stir. Reduce heat and simmer for 15 more minutes.
Serve with taco shells and your favorite toppings or put on top of lettuce and make a taco salad.
Black Beans
1 can black beans, drained and rinsed in cold water
1 T olive oil
1/4 c onion, diced
1 clove garlic, minced
1/2 c chicken broth
1/2 t cumin
1/2 can green chiles
In a saucepan, saute onion and garlic in 1 T olive oil. Add beans and stir. Cook for 2 minutes. Add chicken broth, green chiles and seasonings. Bring to a boil. Reduce heat and simmer 10-15 minutes. Serve on top of tacos or as a side dish.
After going gluten, sugar and dairy free in 2010 - I am healthier and feel so much better! If you use ground turkey and don't put the beans in, there are 1720 calories in the entire meat mixture. Divide that by how many portions you get out of the dish to get your calories.
