I saw this on Paula Deen this morning and had to make them. Oh my!
This is the best burger I have ever eaten!
Ingredients:
1 lb ground turkey
1 can black beans, drained and rinsed
1 c crushed blue corn tortilla chips
1 T chili powder or hot sauce
or 1/2 t cayenne pepper
1 T cumin or 1/2 T Caraway seeds
salt and pepper
juice of 1 lime
4 roma tomatoes, diced
1 vidalia onion, diced
1 c corn
1 T diced jalapeno pepper
1 t dried cilantro
avocado (optional)
Directions:
Divide beans in half. Set half aside.
Mash half of beans and add to ground turkey in a bowl.
Add chips, chili powder, cumin and salt and pepper.
Mix well and make 4 patties.
Cook in skillet with a little bit of olive oil to keep patty from sticking.
For salsa, combine tomatoes, lime juice, diced onion, corn, jalapeno and cilantro.
Stir together and serve on turkey burger.
Place avocado slices and salsa on top of burger. Enjoy!
