After going gluten, sugar and dairy free in 2010 - I am healthier and feel so much better! I have always enjoyed cooking and meal time has always been our family's time of the day to enjoy each others company. Gluten, Sugar & Dairy Free Waffles
Jim asked me to make homemade waffles tonight. No problem - except that I wanted to eat them too! So after I made his, I made some that I could eat. They are light and crisp on the outside. Mmmm.
Ingredients:
1 1/2 cups almond flour
1/2 cup tapioca starch
2 t baking powder
1/2 t sea salt
2 T Splenda or 1/4 t Stevia powder
1/4 cup unsweetened applesauce or pumpkin or smashed banana
2 tablespoons coconut oil
1/2 cup almond or coconut milk
1/4 c chopped pecans (optional)
Directions:
Whisk together your dry ingredients in one bowl.
In another bowl, whisk together the applesauce, oil, and milk.
Pour the dry ingredients into the wet, and stir.
To make waffles, make sure to spray the iron with Pam or I like to use spray coconut oil. You can use a spoon to spread the batter out evenly on the iron.
*If you like pecans, now is the time to add them on top of the batter and then close your waffle iron.
**To make pancakes, you can use a little more liquid than with waffles (about 2 tablespoons more), depending on how thick you prefer your pancakes.
