Jambalaya

This is actually my husband's recipe, and yes he cooks it!
This recipe makes 6-8 servings.

Ingredients:
1 t salt
1 t white pepper
1 t garlic powder
1/2 t cayenne pepper
1/4 t black pepper
1 stick butter or margarine
1 1/2 c chopped onion
1 1/2 c chopped celery
1 1/2 c chopped green bell pepper
1/2 t hot sauce
1 2/3 c chopped big red smokies or metts or sausage of your choice
1 2/3 c chopped chicken breast
3/4 c tomato sauce
2 c uncooked rice (not minute rice)
5 cups of chicken broth

Directions:
Melt margarine. Add seasonings and hot sauce and half of onions, peppers and celery and all of sausage. Cook on high heat for 20 minutes, stirring constantly. 

Add rest of celery, peppers and onions and cook 5 minutes, stirring occasionally. 
Add tomato sauce and 1 cup of broth stirring constantly. Simmer 5 minutes.
Add chicken and cook 15 minutes, stirring occasionally. 
Stir in rice, mixing well. Simmer 12 minutes. Add rest of broth and bring to a boil. 
Reduce heat and cover until done.
