Quinoa Jambalaya

If you would rather have quinoa than rice or if you are allergic to rice, this is a great Jambalaya alternative.Can easily double the recipe.

Ingredients:
1/4 c ghee or organic butter
1/2 t salt
1/2 t white pepper
1/2 t garlic powder
1/4 t cayenne pepper
1/8 t black pepper
1/2 t hot sauce
3/4 c onion, chopped
3/4 c chopped celery
3/4 c red bell pepper, chopped
2 Sweet Italian chicken sausages, diced
1 c dry quinoa (rinsed in cold water)
2 c chicken broth
3/4 c tomato sauce
1 chicken breast, diced
Sea salt and pepper to taste

Directions:
1. Melt ghee. Add seasonings and hot sauce and half of onions, peppers and celery and all of sausage. Cook on high heat for 20 minutes, stirring constantly. 

2. Add rest of celery, peppers and onions and cook 5 minutes, stirring occasionally. 

3. Add tomato sauce and 1 cup of broth stirring constantly. Simmer 5 minutes.

4. Add chicken and cook 15 minutes, stirring occasionally. 

5. Stir in quinoa, mixing well. Simmer 12 minutes. 

6. Add rest of broth and bring to a boil. Reduce heat and cover until done.

Makes 4 servings.
