White Chocolate Cheesecake

I made this for my girls tonight, Christmas night, because it is one of their favorites. If I were eating it, I would have made a berry sauce to go on top, but they like it just like this. My father-in-law loves this crust!

Ingredients:
CRUST
1/4 c sugar
6 T butter
1 egg yolk
1 1/4 c flour
1/8 t salt

CHEESECAKE
2 - 8 oz pkg light cream cheese
12 oz white chocolate chips
1/2 c heavy whipping cream
1 T lemon juice
1/4 t salt
2 whole eggs
1 egg white

Directions:
Preheat oven to 350 degrees. Grease a 9" springform pan with butter.
In a medium bowl, mix together sugar and butter until creamy.
Blend in egg yolk. Beat in flour and 1/8 t salt. Press mixture onto bottom and 1 inch up side of prepared pan. Bake 15 minutes until crust is set. Set aside.

In small saucepan over low heat, melt white chocolate baking bars with heavy cream, stirring constantly until smooth. Set aside.

In large mixer bowl, beat cream cheese, lemon juice and 1/4 t salt until smooth.
Blend in white chocolate mixture. Beat in eggs and egg white. 
Pour into crust. 
Bake 35 minutes or until edge is lightly browned. Loosen and remove side of pan.
Cool completely. Refrigerate. Makes 10 -12 servings.
