Jim is teaching a finance class tonight and Molly is coming for dinner, so I am going to make one of the girls' favorite dishes... fettucini alfredo.
Ingredients:
4 T butter
2 garlic cloves, minced
2 cups heavy cream or half and half
1 - 8 oz pkg cream cheese
1 egg yolk
1/4 c grated parmesan cheese
1/4 c grated romano cheese
or 1/2 c grated parmesan cheese
salt and pepper to taste
fettucini noodles, cooked al dente
*If gluten free, use gluten free pasta
Directions:
Melt butter in a pan over medium low heat.
Add minced garlic cloves and cook for 2 minutes.
Stir egg yolk into cream.
To melted butter, add cream w/egg yolk, cream cheese & parmesan/romano cheese.
Stir until all cheese is melted. DO NOT BOIL!
Add salt and pepper to taste.
Serve over warm pasta with garlic bread.
