One thing I miss, being dairy free, is cole slaw. Especially when eating barbecue. I figured out how to make good cole slaw dairy free.
Ingredients:
10 oz shredded cabbage
2 carrots shredded
6 oz Plain Coconut Yogurt
1 T Dijon Mustard
1 T apple cider vinegar
2 t Truvia or Sugar
Salt and Pepper
Directions:
In a large bowl, add cabbage and carrots. In a small bowl whisk together the rest of the ingredients. Pour dressing over cabbage and carrots and stir together well. Refrigerate a couple of hours or overnight for a better taste, but can eat right away too.
