2 unbaked pie crusts (regular or gluten free)
Filing Ingredients:
3-4 peaches, roughly diced and sliced
1/4 cup almond milk
1 Tbsp corn starch or arrowroot powder
1/3 cup sugar or maple syrup
1/2 tsp cinnamon
2 T lemon juice
2 tsp real vanilla extract
1/4 cup melted butter - cubed
Directions:
Preheat oven to 350 degrees.
Roll out one pie crust into a 9"pie plate.
Combine peaches with the rest of the ingredients.
*Set aside 3T of juice from the filling.
Bake pie crust in oven for 10 minutes.
Remove from oven and add peach filling.
Top with 2nd pie crust and cut slits in top of crust and bake 50 more minutes
OR top with the following crumb crust.
*Crumb Crust:
1/2 cup quick oats
1/4 cup oat flour
2 t Truvia or sugar
1/2 t baking powder
3 T juice from pie filling
Combine Crumb Crust ingredients and stir until moist.
Place on top of peach filling and bake in 350 degree oven until brown on top.
