Eggs

I am posting for my girls. We never made hard boiled eggs that often and last month one of them called me and asked how to hard boil an egg. Last week my other daughter called and asked how she knew if an egg was bad or not. 

How to hard boil an egg...
Put the eggs in a single layer in a saucepan, covered by at least an inch or two of cold water. Start with cold water and gently bring the eggs to a boil. This will help keep them from cracking. I like to sprinkle in some salt as well. It makes the eggs easier to peel. Bring the eggs to a boil. As soon as the water starts to boil, remove the pan from the heat for a few seconds.

Reduce the heat to low, return the pan to the burner. Let simmer for one minute. 
Remove the pan from the heat. Cover, and let sit for 12 minutes. You can let them sit, covered, for up to 15-20 minutes without the eggs getting overcooked.


Remove the eggs and place them into a bowl of ice water. Once cooled, strain the water from the eggs. Store the eggs in a covered container in the refrigerator. (Hard boiled eggs can stink up a refrigerator.) Use within 5 days.

How to tell if an egg is still good or not...
Place the egg into a bowl of cold water that is two times higher than the egg.
Fresh eggs will sink to the bottom of the bowl and probably lie on their sides.
Eggs that are about one week old will lie on the bottom and bob slightly.
If the egg balances on the smallest tip, with the large tip reaching for the top, it's probably close to three weeks old.

Eggs that float at the surface are bad and should not be eaten.
