Mom's Prize Winning Strawberry Cake

My mom won a blue ribbon for this cake several years in a row. It is a great summertime dessert!


Ingredients:
1 white cake mix + ingredients listed on box
1 8 oz bowl cool whip
1 8 oz container of cream cheese
1 cup confectioners sugar
1 quart strawberries, washed and sliced
1/2 cup strawberry jam (I used homemade freezer jam)

Directions:
Bake cake according to package instructions (in 2 round 9" pans). Place on a wire rack to cool. 
Meanwhile, mix together softened cream cheese, sugar and cool whip. 
After cake has completely cooled, spread jam on top of bottom cake. Add the other round cake on top. Frost with icing and then decorate with strawberries. 

*I like to cut up the rest of the strawberries and serve in a bowl so people can put extra berries on top of their cake. For this picture, I used an angel food cake mix, only because I didn't have a white cake and needed to make a dessert for someone. I also put chocolate sprinkles on top. Be creative!
