Sweet Cream Biscuits (gluten free)

Ingredients:
3 cups Peggy's gluten free flour mix 
1/2 t guar gum or xanthan gum
1 T baking soda
1 T baking powder
1/2 t sea salt
3 packets Truvia or 3 T sugar
1/4 c organic shortening
1 c So Delicious plain unsweetened coconut milk
1 T lemon juice
1 T coconut oil (melted)

Directions:
Preheat oven to 450 degrees.
In bowl, mix flours, gum, baking powder, baking soda, salt and sugar or Truvia.

With a pastry cutter, cut in shortening until mixture is coarse.

Gradually add the milk and lemon juice, stirring until it forms a soft dough. Knead together gently on a sheet of wax paper dusted with flour and form a ball.

Pat to 3/4" thickness. Cut into circles with a biscuit cutter until all dough is used. Transfer to a baking sheet lined with parchment paper or a silicon baking mat. 

Bake for 15 minutes.
