Gluten-free, Oat-free Granola

Ingredients:
1 1/3 cup buckwheat groats
1 1/3 cup pumpkin seeds
1/4 c sunflower seeds
1/3 c unsweetened coconut flakes
1 t cinnamon
1/4 c raisins
1/4 t sea salt

2 T coconut oil
1/3 c honey
1/3 c carob chips or chocolate chips


Directions:
Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.
Stir together buckwheat, seeds, coconut, cinnamon, raisins and sea salt in a large bowl. In a separate small bowl, melt coconut oil. Add in honey. Pour honey mixture over dry mixture and stir well. Spread onto parchment paper. 
Bake 10 minutes and stir. Bake 10 more minutes. Let cool. Add chips, if using.
