My family loves stuffed green peppers. I like to prepare them a day ahead and then bake them right before we eat them.
Ingredients:
5 medium-large green peppers, tops and seeds removed.
1 lb ground beef
1 medium onion, diced
2 cloves garlic, minced
1/2 t pepper
1 t salt
1 t dried basil
2 c cooked rice
1 small can tomato sauce
1 1/3 c shredded monterey jack cheese
Directions:
Brown ground beef with chopped onions and minced garlic.
Meanwhile, bring a large pot of water to a boil.
Immerse peppers in boiling water and cook for 5 minutes.
Remove from water and set upside down on a paper towel.
When beef is cooked thoroughly, drain any grease that might remain.
Turn heat to low and add tomato sauce, salt, pepper and basil.
Stir together and cook for 5 minutes.
Remove beef mixture from heat and stir in cooked rice and 1 cup of shredded cheese.
Stuff peppers with beef mixture. Place a small amount of shredded cheese on top of each pepper. Bake at 350 degrees for 30 minutes.
*I can't have rice, so I mixed a portion of the beef mixture with quinoa to stuff my pepper. Can't have cheese either. It's still good!
