*Almond flour makes the best gluten free waffles, but if you can't have almonds this is a close second. Here is the recipe for GF waffles with almond flour.
Ingredients:
1/2 c sorghum flour
1/2 c millet flour
1/4 c teff flour
1/2 c arrowroot starch
1/2 t salt
2 t baking powder
2 T coconut sugar
1/4 c unsweetened applesauce
2 T melted coconut oil
1 c coconut milk
Directions:
Whisk together your dry ingredients.
Whisk together the applesauce, oil, and 1/2 cup of liquid.
Pour the dry ingredients into the wet, and stir. You can add more milk if the batter is too thick. I do it by the tablespoon so as not to pour too much until you've reached the consistency of a thick pancake batter.
To make waffles, make sure to oil the iron frequently and keep the batter thick. It won't spread on the iron, but you can use a spoon to spread the batter out evenly on the iron. If the batter is too thin, it is much more likely to stick.
*To make pancakes, you can use a little more liquid than with waffles (about 2-4 tablespoons more), depending on how thick you prefer your pancakes.
