I also decided to make peach syrup, which everyone loved. (Recipe below)
Peach Syrup
2 - 14 1/2 oz cans of sliced peaches packed in water (no sugar added)or 1 bag frozen peaches and 2 cups of water
pinch of cinnamon
1/3 c honey
1 T lemon juice
1/2 t vanilla or almond extract
1/4 t grated orange peel
2 T coconut sugar or brown sugar
2 T cold water
1 T arrowroot or tapioca or corn starch
Combine peaches with water, honey, cinnamon, lemon juice, coconut sugar and orange peel in small saucepan. Cook until bubbly. Stir starch into 2 T cold water until dissolved, then add to peach mixture. Stir and then add extract. Cook a few more minutes or until it thickens. Serve over pancakes or waffles or ice cream.
