Red Wine Chicken
This is one of my favorite chicken recipes.
1 T olive oil
1 T minced garlic
3 lbs boneless chicken breasts, cut in half
1 t paprika
1/2 c brown sugar or 2 T brown sugar substitute
1 c red wine
salt and pepper to taste
Heat oil in large skillet. Cook garlic in oil until tender. Place chicken breasts in the skillet 10 minutes on each side or until no longer pink and juices run clear.
Sprinkle chicken with paprika and brown sugar. Pour red wine around chicken. Reduce heat. Cover and simmer about 15-20 minutes. Lightly baste chicken with sauce while cooking. Season with salt and pepper.
I had mine with brussel sprouts and butternut squash tonight. It is also good with wild rice.
