Roasted Brussels Sprouts

These are my all time favorite!

Ingredients:
Brussels Sprouts
Extra Virgin Olive Oil
Sea Salt and Pepper

1/4 t Stevia
1/2 c Balsamic Vinegar
dried cranberries or pomegranates (optional)

Directions:
Wash and trim sprouts. Cut big ones in half.
Drizzle a cookie sheet or cake pan with olive oil.
Add brussels sprouts and roll around in olive oil.
Sprinkle with Sea Salt and Pepper.
Preheat oven to 375 degrees F.
Add sprouts and roast, turning once, for 25 minutes.

Meanwhile, in a saucepan on the stove, cook vinegar and Stevia for about 15 minutes on medium low or until it begins to thicken. Remove from heat. When sprouts are done, drizzle vinegar over and then add cranberries and stir.
