Gluten Free Pie Crust

1/2 cup applesauce (with no added sugar)
4 T Chia Seed meal (You can buy ground chia seed or grind chia seeds in a coffee grinder
(2 T chia seeds is equal to about 4 T meal)
Optional: For egg-users: add two eggs and omit half of the applesauce and all of the chia seed meal.
2 T water
1 1/2 T apple cider vinegar
1/2 cup coconut oil, liquified

1 & 1/4 cups almond meal flour or flax seed meal
2/3 cup coconut flour
1/3 cup arrowroot flour
1 1/2 t baking soda
1 1/2 t baking powder

In a medium-large bowl, add applesauce, chia meal + water or eggs, apple cider vinegar and coconut oil. Mix with a mixer.
In a separate bowl, combine flours, baking soda and baking powder. Stir together with a whisk. Add flour mixture to med-large bowl mix. Mix with a mixer. 

If you are going to roll out a crust, then do it between 2 sheets of parchment paper. 
This crust works great as a crumb crust. For example, on top of chicken pot pie.
It also works well to just press into a pie pan. 
If you are baking something sweet, you might want to add 2 T coconut sugar to the crust.
