Buckwheat Waffles

I looked at several recipes online and came up with this final egg-free, dairy-free, gluten-free recipe The waffles are delicious and very sweet. They taste great even without syrup.

Ingredients:
3/4 c buckwheat flour*
3/4 t baking powder
1/8 t salt
1/4 t cardamom
1 c coconut milk
1 t lemon juice
1/2 t vanilla
1/2 c pitted dates

Directions:
In a small bowl stir together milk and lemon juice. Set aside. Combine dry ingredients in a medium bowl and whisk together.  In a food processor or heavy duty blender, chop dates until they form a paste consistency. You can add some of the milk to help get that consistency if needed. Then mix together all ingredients in a large bowl. Spread onto a hot greased waffle iron. I like to spray mine with coconut oil. This made 2 1/2 large waffles. Recipe can easily be doubled to feed more people. It also works well to make them ahead of time and freeze. You can take them out of the freezer, toast and eat.
*I bought buckwheat groats and made my own flour using my coffee been grinder.
