Blue Cornbread

Ingredients:
1 cup blue corn meal
1/2 cup quinoa flakes
1 1/2 t baking powder
1/4 t sea salt
1 T honey or maple syrup
1 egg or 1T chia powder + 1/4 cup water, mixed
1 cup coconut  milk

Directions:
Preheat oven to 425 degrees fahrenheit.
Mix dry ingredients together. Mix wet ingredients together in a separate bowl.
Add wet to dry ingredients and mix together.
Pour into an iron skillet or muffin tins (sprayed with olive oil).
Bake for 15-20 minutes or until golden brown.

*I like to preheat my iron skillet in the oven while it is preheating. The mixture sizzles when I put it in the hot pan. I spread it around and then put it back in the oven to bake. I think this keeps the bottom from being soggy. 5:57
